Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the potatoes into bite-sized pieces, ensuring uniformity.
- In a large mixing bowl, toss the potatoes with olive oil, minced garlic, salt, and pepper.
- Cook the bacon in a skillet over medium heat until crisp. Remove and crumble the bacon, leaving the drippings in the pan.
- Combine the bacon and potatoes in the skillet, mixing well to coat.
- Transfer the potato mixture to a baking dish. Top with shredded cheese, distributing evenly.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes for a crunchy, golden top.
- Garnish with fresh parsley before serving.
