- 3 cups rotisserie chicken, shredded
- 8 pieces corn tortillas
- 2 cups shredded cheese (a mix of cheddar and mozzarella)
- 1 can (10 oz) enchilada sauce (red or green)
- 1 cup sour cream
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the diced onions and minced garlic, stirring until aromatic and translucent, about 3-5 minutes.
- Combine shredded chicken with half of the enchilada sauce and a portion of the cheeses, adding salt and pepper to taste.
- Mix until well incorporated.
- Take a corn tortilla, fill it with the chicken mixture, and roll it up.
- Repeat until all tortillas are filled.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Place the rolled tortillas seam-side down in the dish.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Bake in the preheated oven for about 25-30 minutes, until bubbly and golden brown.
- Serve hot, topped with sour cream and fresh cilantro.
Notes
For added flavor, consider mixing some sour cream into the chicken filling or adding chopped jalapeños or bell peppers.
