  • – 1/4 teaspoon (1 ml) smoked paprika
  • – 1/4 cup (60ml) mint leaves, thinly sliced and packed [seriously, pack it in]
  • – 1 cup (240ml) ricotta cheese
  • – cayenne to taste

Instructions

  1. Set your oven to a temperature of 450°F to preheat.
  2. Remove the ends of the zucchini, then slice them lengthwise and cut each section into triangular pieces.
  3. Place the zucchini pieces in a bowl and mix them with the olive oil, crushed garlic, salt, smoked paprika, and mint leaves.
  4. Transfer the seasoned zucchini into a baking dish.
  5. Add dollops of ricotta cheese on top, ensuring about half of the zucchini is covered.
  6. Lightly sprinkle cayenne pepper over the ricotta and zucchini.
  7. Place the baking dish in the preheated oven and cook for 30 minutes.
  8. If you desire a more golden cheese topping, you may leave it in a bit longer, but be cautious as the zucchini might become overcooked.
