- 2 tablespoons vegetable oil (30 ml)
- 2 cloves garlic, minced
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt, to taste
- Black pepper, to taste
- 1/4 cup fresh basil leaves, chopped (about 10 g)
- 1/4 cup fresh parsley, chopped (about 10 g)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis into 1/4-inch thick rounds.
- Slice the tomatoes into 1/4-inch thick rounds.
- In a mixing bowl, combine ricotta cheese, minced garlic, dried oregano, dried basil, salt, and black pepper.
- Drizzle olive oil evenly over the bottom of a baking dish.
- Arrange a layer of zucchini slices in the baking dish.
- Spread a portion of the ricotta mixture over the zucchini layer.
- Place a layer of tomato slices over the ricotta.
- Sprinkle a portion of shredded mozzarella and grated Parmesan over the tomatoes.
- Repeat layering with remaining zucchini, ricotta, tomatoes, mozzarella, and Parmesan until ingredients are used up.
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove foil and bake for an additional 10-15 minutes, until cheese is bubbly and golden.
- Remove from the oven and let it cool slightly.
- Sprinkle chopped fresh basil and parsley over the top before serving.
