  • 2 tablespoons vegetable oil (30 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup fresh basil leaves, chopped (about 10 g)
  • 1/4 cup fresh parsley, chopped (about 10 g)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis into 1/4-inch thick rounds.
  3. Slice the tomatoes into 1/4-inch thick rounds.
  4. In a mixing bowl, combine ricotta cheese, minced garlic, dried oregano, dried basil, salt, and black pepper.
  5. Drizzle olive oil evenly over the bottom of a baking dish.
  6. Arrange a layer of zucchini slices in the baking dish.
  7. Spread a portion of the ricotta mixture over the zucchini layer.
  8. Place a layer of tomato slices over the ricotta.
  9. Sprinkle a portion of shredded mozzarella and grated Parmesan over the tomatoes.
  10. Repeat layering with remaining zucchini, ricotta, tomatoes, mozzarella, and Parmesan until ingredients are used up.
  11. Cover the baking dish with aluminum foil.
  12. Bake in the preheated oven for 25 minutes.
  13. Remove foil and bake for an additional 10-15 minutes, until cheese is bubbly and golden.
  14. Remove from the oven and let it cool slightly.
  15. Sprinkle chopped fresh basil and parsley over the top before serving.
