  • 1 cup (240 ml) granulated sugar (200 grams)
  • 1 cup (240 ml) brown sugar, packed (200 grams)
  • 4 large eggs
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 cup (240 ml) all-purpose flour (120 grams)
  • 1 cup (240 ml) unsweetened cocoa powder (100 grams)
  • 1/2 teaspoon (3 ml) salt (2.5 grams)
  • 1 cup (240 ml) chopped cherries (150 grams)
  • 8 ounces (227 g) cream cheese, softened (227 grams)
  • 1/2 cup (120 ml) powdered sugar (60 grams)
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 pint vanilla ice cream, slightly softened (473 milliliters)
  • 1 cup (240 ml) cherry pie filling or cherry jam (250 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a 9×13-inch baking pan with parchment paper.
  3. In a large bowl, mix melted butter, granulated sugar, and brown sugar until combined.
  4. Add eggs and 1 teaspoon vanilla extract to the sugar mixture, and whisk until smooth.
  5. In a separate bowl, sift together flour, cocoa powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Fold in the chopped cherries gently.
  8. Pour the brownie batter into the prepared baking pan, spreading evenly.
  9. Bake in the preheated oven for 25-30 minutes, or until a toothpick comes out clean.
  10. Allow the brownies to cool completely in the pan.
  11. In a medium bowl, beat the cream cheese until smooth.
  12. Add powdered sugar and 1 teaspoon vanilla extract to the cream cheese, mixing until creamy.
  13. Spread the cream cheese mixture evenly over the cooled brownies.
  14. Layer the softened vanilla ice cream over the cream cheese layer, smoothing the top.
  15. Freeze the stack for at least 2 hours, or until the ice cream is firm.
  16. Once firm, remove from the freezer and spread the cherry pie filling or cherry jam over the ice cream layer.
  17. Return to the freezer for another hour to set.
  18. Before serving, let the stack sit at room temperature for a few minutes to soften slightly.
  19. Cut into squares and serve immediately.

Notes

  • Ensure the butter is completely melted and thoroughly combined with the sugars to achieve a smooth brownie batter.
  • Opt for high-quality cocoa powder to enhance the chocolate flavor of the brownies.
  • Gently fold in the chopped cherries to avoid them from breaking apart in the batter. Allow the cream cheese layer to freeze before adding the ice cream for distinct layers in the dessert.
