Description

A comforting dish featuring tender chicken enveloped in a creamy cheese sauce served over fluffy rice.


Ingredients

  • 2 Cups Long Grain White Rice
  • 2 tbs Avocado Oil
  • 1 Yellow Onion, Diced
  • 45 Garlic Cloves, Minced
  • 1 packet Sazon Seasoning
  • 1 tbs Chicken Flavored Bouillon
  • 16 oz Tomato Sauce
  • 4 Cups Water
  • 2 lbs Boneless Skinless Chicken Breasts
  • 2 tbs Butter
  • 2 tbs Avocado Oil
  • 1 tbs Garlic Powder
  • 1 tbs Onion Powder
  • 1 tbs Chili Powder
  • 1 tbs Cumin
  • 1 packet Sazon Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 12 oz Can of Evaporated Milk
  • 16 oz Queso Blanco Velveeta
  • 7 oz Can of Diced Chilis
  • 8 oz Grated Pepper Jack Cheese

Instructions

  1. Prepare the ingredients by dicing onion and mincing garlic.
  2. Heat 2 tablespoons of avocado oil in a large saucepan over medium heat.
  3. Add diced onion and garlic, sautéing until fragrant and translucent.
  4. Stir in rinsed rice, coating with the oil.
  5. Sprinkle in Sazon seasoning and chicken bouillon.
  6. Pour 16 ounces of tomato sauce and 4 cups of water into the pot, stirring together.
  7. Bring to a boil, then reduce heat to low, cover, and let simmer until rice is fluffy.
  8. Heat another 2 tablespoons of avocado oil in a skillet over medium heat.
  9. Season chicken with garlic powder, onion powder, chili powder, cumin, and Sazon seasoning.
  10. Sear chicken until golden brown, then remove and set aside.
  11. Add 2 tablespoons of butter to the skillet, then introduce evaporated milk, queso blanco, and diced chilis.
  12. Stir until a smooth cheese sauce forms, then return chicken to the skillet.
  13. Simmer on low for 5-10 minutes until chicken is cooked through.
  14. Serve the cheesy chicken over the rice and top with grated pepper jack cheese.

Notes

For added freshness, consider a splash of lime juice on finished dish.
