- 2 Cups Long Grain White Rice
- 2 tbs Avocado Oil
- 1 Yellow Onion, Diced
- 4–5 Garlic Cloves, Minced
- 1 packet Sazon Seasoning
- 1 tbs Chicken Flavored Bouillon
- 16 oz Tomato Sauce
- 4 Cups Water
- 2 lbs Boneless Skinless Chicken Breasts
- 2 tbs Butter
- 2 tbs Avocado Oil
- 1 tbs Garlic Powder
- 1 tbs Onion Powder
- 1 tbs Chili Powder
- 1 tbs Cumin
- 1 packet Sazon Seasoning
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 12 oz Can of Evaporated Milk
- 16 oz Queso Blanco Velveeta
- 7 oz Can of Diced Chilis
- 8 oz Grated Pepper Jack Cheese
Instructions
- Prepare the ingredients by dicing onion and mincing garlic.
- Heat 2 tablespoons of avocado oil in a large saucepan over medium heat.
- Add diced onion and garlic, sautéing until fragrant and translucent.
- Stir in rinsed rice, coating with the oil.
- Sprinkle in Sazon seasoning and chicken bouillon.
- Pour 16 ounces of tomato sauce and 4 cups of water into the pot, stirring together.
- Bring to a boil, then reduce heat to low, cover, and let simmer until rice is fluffy.
- Heat another 2 tablespoons of avocado oil in a skillet over medium heat.
- Season chicken with garlic powder, onion powder, chili powder, cumin, and Sazon seasoning.
- Sear chicken until golden brown, then remove and set aside.
- Add 2 tablespoons of butter to the skillet, then introduce evaporated milk, queso blanco, and diced chilis.
- Stir until a smooth cheese sauce forms, then return chicken to the skillet.
- Simmer on low for 5-10 minutes until chicken is cooked through.
- Serve the cheesy chicken over the rice and top with grated pepper jack cheese.
Notes
For added freshness, consider a splash of lime juice on finished dish.
