- 1 lb Chicken thighs or breasts (Boneless skinless)
- 2 tbsp Olive oil (For marinade)
- 2 tbsp Lime juice (Freshly squeezed)
- 1 tsp Cumin (Ground)
- 1 tsp Chili powder (Or more for heat)
- ½ tsp Smoked paprika (Adds depth)
- ½ tsp Garlic powder
- ½ tsp Salt
- ¼ tsp Black pepper
- 4 Large flour tortillas (Burrito-size)
- 2 cups Cooked rice (White or brown)
- 1 can 15 oz Black beans (Rinsed & drained)
- 1 cup Cheddar cheese (Shredded)
- 1 cup Pico de gallo (Fresh)
- ½ cup Sour cream (Or Greek yogurt)
- 1 Avocado (Sliced or guacamole)
- 1 cup Lettuce (Shredded)
- 2 tbsp Fresh cilantro (Chopped)
- Hot sauce (Optional)
- Pickled jalapeños (Optional)
- Cotija cheese (Optional garnish)
- Lime wedges (For serving)
Instructions
- Marinate the chicken thighs or breasts by combining olive oil, lime juice, cumin, chili powder, smoked paprika, garlic powder, salt, and black pepper in a bowl. Coat the chicken with this mixture and let it marinate for at least 30 minutes.
- Preheat your grill or a skillet over medium-high heat. Place the marinated chicken on the grill or in the skillet. Cook until the chicken is no longer pink in the center and reaches an internal temperature of 165°F, about 6-7 minutes per side for thighs and a little less for breasts.
- Once the chicken is cooked, let it rest for a few minutes before slicing it into bite-sized pieces.
- Meanwhile, warm the flour tortillas in a dry skillet or microwave until soft and pliable.
- To assemble, start by layering the cooked rice and drained black beans on the tortillas. Next, add the grilled chicken pieces, followed by shredded lettuce, diced avocado, and pico de gallo. Don’t forget to sprinkle cheddar cheese, add sour cream (or Greek yogurt), and finish with fresh cilantro.
- Wrap the tortillas tightly around the fillings, folding in the sides as you roll them up.
- Serve your chicken burritos warm with lime wedges, hot sauce, and any additional toppings you enjoy, like cotija cheese or pickled jalapeños.
Notes
Consider marinating the chicken overnight for deeper flavor. Feel free to customize with your choice of toppings.
