- 1 can refrigerated biscuit dough
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups mixed vegetables (carrots, peas, celery)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.
- Add the mixed vegetables and cook for another 5 minutes.
- Pour in the chicken broth and bring to a simmer.
- Stir in the shredded rotisserie chicken, heavy cream, and thyme. Season with salt and pepper.
- Cut the biscuit dough into small pieces and drop them into the simmering soup.
- Cover and cook for about 10-12 minutes, until the dumplings are cooked through.
- Serve hot, garnished with fresh parsley.
