Description
A comforting Chicken Lo Mein dish that combines tender chicken and vibrant vegetables with flavorful lo mein noodles.
Ingredients
Scale
- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Gather all your ingredients together. Start by cooking the lo mein noodles according to the package instructions until they reach an al dente consistency. Drain the noodles and set them aside.
- Heat a large skillet or wok over medium-high heat and add the sesame oil. Once the oil is heated, sauté the chicken breasts until they turn golden brown and fully cook, which should take about 6-8 minutes. Remove the chicken and let it sit.
- In the same pan, stir-fry the chopped bell peppers, sliced carrots, and green onions for about 3-4 minutes until they are tender yet still crisp.
- Return the cooked chicken to the skillet, then add the lo mein noodles, low-sodium soy sauce, minced garlic, and any additional spices you enjoy. Toss everything together until fully mixed and heated through.
- Serve hot, drizzling extra soy sauce on top if desired.
Notes
Experiment with different vegetables or add spices to modify the flavor. Prepping all ingredients in advance helps with a smoother cooking process.
