Description

Delicious chicken patties made with leftover rotisserie chicken, breadcrumbs, and cheese, perfect for quick weeknight dinners.


Ingredients

  • 2 cups shredded leftover rotisserie chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Combine the shredded chicken, breadcrumbs, cheese, onion, parsley, egg, garlic powder, salt, and pepper in a large bowl.
  2. Form the mixture into patties of desired size.
  3. Heat oil in a skillet over medium heat.
  4. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Remove from the skillet and place on paper towels to drain excess oil.
  6. Serve warm.

Notes
