- 1/4 cup (60 ml) vegetable oil
- 2 tablespoons (30 ml) fresh lime juice
- 1 tablespoon (15 ml) agave (or maple syrup)
- 1/4 teaspoon (1 ml) chipotle powder (optional)
- 1/2 teaspoon (3 ml) salt
- Black pepper, to taste
- 3 cups (500 g) chickpeas, drained and rinsed if canned
- 1/2 cucumber, thinly sliced
- 2–3 peaches, pits removed and diced
- 1 watermelon radish, cut in half and thinly sliced*
- 1 jalapeño, thinly sliced (remove seeds for less heat)
- 1 avocado, diced
- 1/2 ounce (14 g) fresh basil, roughly chopped
Instructions
- Prepare the Dressing: Combine the vegetable oil, lime juice, agave, chipotle powder, salt, and black pepper in a small container with a lid. Secure the lid tightly and shake vigorously until the mixture is well blended. Set aside.
- Assemble the Salad: Place the chickpeas in a large mixing bowl, then add the cucumber, peaches, radish, and jalapeño. Drizzle the dressing over the salad ingredients and toss everything together until evenly coated. Add the avocado and basil to the bowl and gently mix them into the salad.
- Serve: Taste and add more salt and pepper if needed. Serve right away, or refrigerate for 15-30 minutes to cool before serving. The salad can be stored in the refrigerator for up to four days.
Notes
- For a sweeter dressing, substitute maple syrup for agave.
- To enhance the smoky flavor, increase the chipotle powder in the dressing.
- For a milder heat in the salad, ensure to deseed the jalapeño.
