Ingredients

  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 1 carrot, sliced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  1. In a pot, bring the chicken or vegetable broth to a boil.
  2. Add the minced garlic and sliced mushrooms, and simmer for 5 minutes.
  3. Add the sliced carrots and chopped bok choy, and cook for an additional 3-4 minutes until the vegetables are tender.
  4. Stir in the soy sauce and season with salt and pepper.
  5. In a separate pot, cook the noodles according to package instructions.
  6. Drain the noodles and divide them among serving bowls.
  7. Ladle the hot broth and vegetables over the noodles.
  8. Garnish with chopped green onions and any additional protein if desired. Serve hot.
