- 120 g butter
- 160 g granulated sugar
- 75 g brown sugar
- 3 large eggs (room temperature)
- 1.5 teaspoons vanilla extract
- 90 g all-purpose flour
- 30 g cocoa powder
- 1 teaspoon salt
- 50 g nuts (optional)
Instructions
- Preheat the oven to 170°C (or 160ºC with a fan).
- Line your baking pan with parchment paper, securing it with butter, oil, or non-stick spray.
- Chop the chocolate and butter, then melt together using the double boiler method or microwave until smooth.
- In a large bowl, whisk the eggs with both sugars until the mixture lightens in color and thickens, about five minutes.
- Add the warm chocolate mixture and vanilla extract, folding gently to combine.
- Sift the flour, cocoa powder, and salt over the chocolate mixture. Gently fold until just combined.
- Optional: Chop the nuts and fold gently into the batter.
- Pour the brownie batter into the prepared pan, smoothing the top.
- Bake for 30 minutes, or until a toothpick inserted comes out with slight moist crumbs.
- Let cool for at least two hours on a wire rack before cutting into squares for the best texture.
Notes
For a fudgier result, reduce baking time to 25 minutes. For a dairy-free option, substitute butter with coconut oil and use flax eggs.
