Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup heavy cream
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup cream cheese
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a cake pan.
  3. Combine all-purpose flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  4. Cream together softened butter and granulated sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in vanilla extract and buttermilk until combined.
  7. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  8. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let the cake cool completely.
  10. Whip heavy cream to soft peaks in a separate bowl.
  11. Mix peanut butter, powdered sugar, and vanilla extract until smooth in another bowl.
  12. Fold the whipped cream into the peanut butter mixture until well combined.
  13. Spread the peanut butter mousse over the cooled chocolate cake.
  14. Heat heavy cream until simmering and pour over chocolate chips for ganache.
  15. Stir until smooth and pour over the mousse layer.
  16. Chill the cake for at least 2 hours before serving.

Notes

Use room temperature ingredients for better mixing and always chill the mousse to set properly.
