- 1 c. (240 ml) vegetable oil
- 1 c. (200 g) sugar
- 2 (7 g) packets active dry yeast
- 8 c. (960 g) (plus 125 g extra, reserved) all-purpose flour

- 1 tsp (5 ml). (scant) baking soda
- 1 tbsp (15 ml). (heaping) salt
- Plenty of melted butter
- 2 c. (400 g) sugar
- Generous sprinkling of cinnamon
- 1 (907 g) bag powdered sugar
- 2 tsp (10 ml). maple flavoring
- 1/2 c. (120 ml) milk
- 1/4 c. (60 ml) melted butter
- 1/4 c. (60 ml) brewed coffee
- 1/8 tsp (1 ml). salt
Instructions
- For preparing the dough, warm the milk, vegetable oil, and sugar in a medium pot over medium heat until just about to boil. Allow it to cool until it’s lukewarm. Sprinkle the yeast over the top and let it rest on the milk mixture for a minute.
- Incorporate 8 cups of flour into the mixture. Mix until just blended, then cover with a clean kitchen cloth and leave in a warm spot for an hour. After this time, uncover and add the baking powder, baking soda, salt, and the remaining flour. Mix well until combined. Use the dough immediately or place it in a bowl and refrigerate for up to three days, pressing the dough down if it rises too high. (Note: Chilling the dough for at least an hour makes it easier to handle.)
- To prepare the rolls, take half the dough from the bowl. On a floured surface, roll it out into a large thin rectangle, roughly 30 by 10 inches.
- For the filling, drizzle between 3/4 cup and 1 cup of melted butter over the dough. Use your hands to spread it out evenly. Generously scatter half of the cinnamon and 1 cup of sugar over the butter. Feel free to add more butter or sugar for extra gooeyness.
- Starting from the farthest edge, roll the dough tightly towards you. Use both hands to work slowly, ensuring the roll remains tight. If the filling spills out, that’s a good sign. Once rolled, pinch the seam to seal it, then place the roll seam-side down. You should have a long, buttery, cinnamon-infused log.
- Place a cutting board under the log and slice it into 1/2-inch pieces with a sharp knife. This will yield 20 to 25 rolls. Pour a few teaspoons of melted butter into baking pans and swirl to coat. Arrange the rolls in the pans, leaving space between them. (Each pan holds 7 to 9 rolls.)
- Repeat the rolling and cutting process with the remaining dough and additional pans. Preheat the oven to 375°F. Cover the pans with a towel and let them rise for at least 20 minutes before baking. Remove the towel and bake for 15 to 18 minutes, or until they turn golden. Avoid over-baking.
- While the rolls bake, prepare the maple glaze by whisking powdered sugar, milk, butter, coffee, salt, and maple flavoring in a large bowl until smooth. Adjust the glaze’s taste and thickness by adding more ingredients as needed.
- Once baked, take the rolls out of the oven and immediately pour the glaze over them, ensuring it covers all parts. As they cool, the rolls will soak up the glaze’s flavor. They get more delicious with time, although they rarely last long. Make these for someone special—it will strengthen your bond, I assure you.
