Ingredients

  • 1 loaf of bread (preferably day-old)
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup melted butter
  • 1/4 cup brown sugar
  • Extra cinnamon and sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Tear the bread into small pieces and place them in a large mixing bowl.
  3. In another bowl, whisk together eggs, milk, granulated sugar, vanilla, ground cinnamon, and salt.
  4. Pour the egg mixture over the bread and gently fold until the bread is well coated.
  5. Divide the mixture into the muffin tin.
  6. In a small bowl, combine melted butter, brown sugar, and extra cinnamon and sugar, then drizzle this over each muffin.
  7. Bake for about 20-25 minutes, or until golden brown.
  8. Allow to cool slightly before serving. Enjoy your muffins!
