  • 2 large eggs

  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin with paper liners.
  2. Whisk together the dry ingredients: flour, sugar, baking powder, salt, and cinnamon in a medium bowl.
  3. Melt the butter and in a larger bowl, mix it with milk, eggs, nutmeg, and vanilla extract.
  4. Combine the dry ingredients with the wet ingredients, stirring until just mixed.
  5. Evenly divide the batter among the muffin cups, filling each about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Cool the muffins in the tin for 5 minutes, then transfer them to a wire rack.
  8. Mix sugar and cinnamon for coating; while muffins are warm, dip the tops into the mixture and press gently.
  9. Return the muffins to the oven for an additional 2-3 minutes for a crispy topping.

Notes

For a more flavorful muffin, consider adding chocolate chips or blueberries to the batter.
