  • ¼ cup butter
  • 8 cups thinly sliced apples (peeled and cored)
  • ⅔ cup lightly packed brown sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • 1 egg
  • 1 teaspoon water
  • Coarse sugar (optional)

Instructions

  1. Melt the butter in a large pot over medium-low heat.
  2. Add the sliced apples, brown sugar, flour, cinnamon, lemon juice, and salt, and stir together.
  3. Cook for 8 to 10 minutes until the apples soften, then remove from heat to cool.
  4. Divide the prepared pie dough into two halves and roll out one disc to about 1/8-inch thick.
  5. Transfer this rolled dough to the pie plate, pressing it into the bottom and sides.
  6. Prepare an egg wash by whisking the egg and water in a small bowl.
  7. Transfer the cooled apple filling into the crust.
  8. Roll out the second disc of dough and place it over the filling or create a lattice topping.
  9. Brush the top with the egg wash and sprinkle coarse sugar if desired.
  10. Bake at 425°F for 15 minutes, then reduce to 350°F and continue baking for 40 minutes until golden brown.
  11. Cool slightly before serving.

For best results, use a mix of apple varieties for depth of flavor, and ensure the apples are cut uniformly for even cooking.
