- 1/4 cup dry sherry
- 2 egg yolks
- Salt and pepper to taste
- Chopped fresh parsley for garnish

Instructions
- Melt the butter in a large skillet over medium heat.
- Add the onion, red bell pepper, and mushrooms; sauté until softened.
- Stir in the lobster meat, cream, broth, and sherry. Cook until heated through.
- Whisk the egg yolks in a small bowl, temper them with a bit of the lobster mixture, then add back to the skillet.
- Cook gently until the sauce thickens. Season with salt and pepper.
- Serve over toast, rice, or pasta, and garnish with fresh parsley.
