  • 2 egg yolks

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the onion, red bell pepper, and mushrooms; sauté until softened.
  3. Stir in the lobster meat, cream, broth, and sherry. Cook until heated through.
  4. Whisk the egg yolks in a small bowl, temper them with a bit of the lobster mixture, then add back to the skillet.
  5. Cook gently until the sauce thickens. Season with salt and pepper.
