Instructions
- Combine the Arborio rice and milk in a medium saucepan.
- Cook over medium heat, stirring frequently until the mixture begins to thicken.
- Add sugar, cinnamon, and a pinch of salt. Continue to cook and stir for about 20-25 minutes until the rice is tender and the pudding is creamy.
- If desired, stir in raisins.
- Remove from heat and let it cool slightly before serving. You can serve it warm or chilled.
Notes
For a creamier pudding, adjust the milk ratio. Steeping the milk with a cinnamon stick or vanilla bean can enhance flavor.
