Description

Ingredients

  • 1 tablespoon melted butter
  • 1 egg (room temperature)
  • 1½ cups buttermilk (room temperature)
  • 3 tablespoons softened butter
  • 1 tablespoon cinnamon
  • ½ cup all-purpose flour (for streusel)
  • ½ cup brown sugar
  • ½ cup firmly packed light brown sugar
  • ½ tablespoon cinnamon (for streusel)
  • ¼ cup cubed butter
  • ⅛ teaspoon salt (for streusel)
  • ½ cup powdered sugar (for drizzle)
  • 2½ teaspoons milk (for drizzle)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9-by-9-inch baking dish and optionally line it with parchment paper.
  3. In a large bowl, combine all dry ingredients: 2 cups of flour, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp salt.
  4. In a medium bowl, whisk together melted butter, egg, and buttermilk until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Spread half of the batter into the prepared baking dish.
  7. For the streusel filling, mix softened butter, cinnamon, additional flour, and brown sugars in a bowl until crumbly; sprinkle half over the batter.
  8. Pour the remaining batter over the streusel layer and sprinkle the rest of the crumb topping.
  9. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  10. Let it cool before whisking together powdered sugar and milk for the drizzle, then drizzle over the cooled cake.

Notes

For a lighter cake, sift the flour and baking powder together. Customize it by adding nuts or chocolate chips.
