- 3 tbsp melted butter
- 8 oz cream cheese, softened
- ¾ cup powdered sugar
- ½ cup cookie butter (plus extra for drizzling)
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- Extra cookies for garnish (optional)
Instructions
- In a small bowl, mix cookie crumbs and melted butter.
- Spoon a layer of the mixture into the bottom of each serving cup.
- In another bowl, whip the heavy cream until soft peaks form and set aside.
- In a large bowl, beat cream cheese, powdered sugar, cookie butter, and vanilla extract until smooth.
- Gently fold the whipped cream into the cookie butter mixture to create a light mousse texture.
- Layer cheesecake filling over the crumb crust in each cup. Drizzle with melted cookie butter.
- Repeat the layers, ending with cheesecake filling on top.
- Garnish with extra cookie crumbs or whole cookies.
- Chill in the fridge for at least 1 hour before serving.
Notes
For best results, use room temperature cream cheese and a cold mixing bowl for whipping the cream.
