- 1 rotisserie chicken, shredded
- 8 cups chicken broth
- 2 cups egg noodles
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
- Heat some oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes.
- Add the garlic and cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add the egg noodles and cook according to package directions.
- Stir in the shredded rotisserie chicken, thyme, parsley, salt, and pepper.
- Reduce heat and let simmer for about 10 minutes before serving.

For an even richer flavor, use homemade chicken broth or adjust seasonings to personal preference.
