  • 1 teaspoon (5 ml) Italian seasoning
  • 1/4 teaspoon (1 ml) granulated garlic
  • 1 pound (454 g) boneless skinless chicken breast, cut into 1 to 1 1/2 inch pieces
  • 2 tablespoon (30 ml) s olive oil
  • 1 tablespoon (15 ml) grated garlic (from about 6 garlic cloves)
  • 1/4 cup (60 ml) apple juice
  • 4 tablespoon (60 ml) s (2 ounce (57 g) s) unsalted butter, cubed
  • 1/2 tablespoon (8 ml) lemon juice fresh (from 1 lemon)
  • Chopped parsley

Instructions

  1. Collect all necessary items.
  2. In a medium-sized bowl, blend together the flour, kosher salt, Italian herbs, and granulated garlic until well mixed; add the chicken pieces and stir until they are thoroughly coated.
  3. In a large non-stick pan, heat the olive oil over medium-high heat until it begins to shimmer. Arrange the chicken pieces in a single layer and let them cook without moving until the underside is golden brown, approximately 4 minutes. Turn the chicken over and continue cooking until the other side is browned and the chicken is fully cooked, around another 4 minutes. Move the chicken to a clean plate and wipe the pan clean.
  4. Lower the heat to medium. Introduce the grated garlic to the pan and stir continuously, cooking until it becomes fragrant and lightly browned, about 1 to 2 minutes. Add the apple juice, stirring frequently until most of it has evaporated, roughly 2 minutes.
  5. Incorporate the cubed butter and fresh lemon juice into the pan, stirring until the butter is completely melted, which should take about 1 minute. Return the chicken to the pan and mix it with the butter sauce until it is evenly covered.
