Instructions
- In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and Italian seasoning. Form into small meatballs.
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until soft.
- Add chicken broth and bring to a boil.
- Carefully add meatballs to the boiling broth and cook for about 10 minutes.
- Add the pasta and cook according to package instructions until tender.
- Stir in the spinach or kale and cook until wilted.
- Serve hot, garnished with fresh parsley.
