A heartwarming bowl of Italian wedding soup featuring tender meatballs, fresh vegetables, and small pasta in a savory broth, perfect for chilly evenings.

Ingredients

Scale
  • 1/2 pound ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 8 cups chicken broth
  • 1 cup small pasta (like acini di pepe or orzo)
  • 2 cups fresh spinach or kale
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, salt, pepper, and Italian seasoning. Form into small meatballs.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until soft.
  3. Add chicken broth and bring to a boil.
  4. Carefully add meatballs to the boiling broth and cook for about 10 minutes.
  5. Add the pasta and cook according to package instructions until tender.
  6. Stir in the spinach or kale and cook until wilted.
  7. Serve hot, garnished with fresh parsley.

Notes

For added depth, consider simmering the broth longer. Fresh herbs can enhance the flavor even more.
