A heartwarming crack squash casserole featuring layers of squash, creamy mushroom soup, bacon, and a crispy topping of French fried onions and cheddar cheese.

- 4 cups squash, sliced
- 1 large onion, chopped
- 1 can cream of mushroom soup
- 1 cup sour cream
- 1 packet ranch dressing mix
- 4 strips bacon, cooked and crumbled
- 2 cups cheddar cheese, shredded
- 1 cup French fried onions
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the squash, onions, cream of mushroom soup, sour cream, and ranch dressing mix in a large mixing bowl.
- Fold in the cooked bacon and half of the cheddar cheese.
- Pour the mixture into a greased casserole dish.
- Top with the remaining cheddar cheese and sprinkle French fried onions on top.
- Bake for 30-40 minutes until bubbly and golden.
- Allow to cool slightly before serving.
Notes
For richer flavor, roast the squash before adding to the mixture. Add hot sauce for a kick.
