Description

A heartwarming crack squash casserole featuring layers of squash, creamy mushroom soup, bacon, and a crispy topping of French fried onions and cheddar cheese.


Ingredients

  • 4 cups squash, sliced
  • 1 large onion, chopped
  • 1 can cream of mushroom soup
  • 1 cup sour cream
  • 1 packet ranch dressing mix
  • 4 strips bacon, cooked and crumbled
  • 2 cups cheddar cheese, shredded
  • 1 cup French fried onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the squash, onions, cream of mushroom soup, sour cream, and ranch dressing mix in a large mixing bowl.
  3. Fold in the cooked bacon and half of the cheddar cheese.
  4. Pour the mixture into a greased casserole dish.
  5. Top with the remaining cheddar cheese and sprinkle French fried onions on top.
  6. Bake for 30-40 minutes until bubbly and golden.
  7. Allow to cool slightly before serving.

Notes

For richer flavor, roast the squash before adding to the mixture. Add hot sauce for a kick.
