Ingredients

  • 2 large sweet potatoes
  • 1/2 cup (50g) fresh cranberries
  • 1 medium apple, peeled and diced
  • 1/4 cup (60ml) orange juice
  • 2 tablespoons (30g) vegetable oil
  • 3 tablespoons (45ml) maple syrup
  • 1/4 teaspoon (1 ml) ground cinnamon
  • 1/4 teaspoon (1 ml) ground nutmeg
  • 1/4 teaspoon (1 ml) salt
  • 1/4 cup (30g) chopped pecans

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes.
  3. Pierce each sweet potato several times with a fork.
  4. Place the sweet potatoes on a baking sheet.
  5. Bake for 45-50 minutes until tender.
  6. While potatoes bake, combine cranberries and orange juice in a saucepan.
  7. Cook over medium heat until cranberries start to burst, about 5 minutes.
  8. Add the diced apple to the cranberry mixture.
  9. Stir in the butter, maple syrup, cinnamon, nutmeg, and salt.
  10. Cook for another 5 minutes until apples are tender.
  11. Remove sweet potatoes from the oven and let cool slightly.
  12. Cut each sweet potato in half lengthwise.
  13. Scoop out the flesh, leaving a small border inside the skin.
  14. Mash the sweet potato flesh in a bowl.
  15. Stir the cranberry-apple mixture into the mashed sweet potato.
  16. Spoon the mixture back into the sweet potato skins.
  17. Place the stuffed sweet potatoes back on the baking sheet.
  18. Sprinkle chopped pecans over the top of the stuffed sweet potatoes.
  19. Return to the oven and bake for another 10-15 minutes.
  20. Remove from oven and let cool slightly before serving.
