- 2 large sweet potatoes
- 1/2 cup (50g) fresh cranberries
- 1 medium apple, peeled and diced
- 1/4 cup (60ml) orange juice
- 2 tablespoons (30g) vegetable oil
- 3 tablespoons (45ml) maple syrup
- 1/4 teaspoon (1 ml) ground cinnamon
- 1/4 teaspoon (1 ml) ground nutmeg
- 1/4 teaspoon (1 ml) salt
- 1/4 cup (30g) chopped pecans
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the sweet potatoes.
- Pierce each sweet potato several times with a fork.
- Place the sweet potatoes on a baking sheet.
- Bake for 45-50 minutes until tender.
- While potatoes bake, combine cranberries and orange juice in a saucepan.
- Cook over medium heat until cranberries start to burst, about 5 minutes.
- Add the diced apple to the cranberry mixture.
- Stir in the butter, maple syrup, cinnamon, nutmeg, and salt.
- Cook for another 5 minutes until apples are tender.
- Remove sweet potatoes from the oven and let cool slightly.
- Cut each sweet potato in half lengthwise.
- Scoop out the flesh, leaving a small border inside the skin.
- Mash the sweet potato flesh in a bowl.
- Stir the cranberry-apple mixture into the mashed sweet potato.
- Spoon the mixture back into the sweet potato skins.
- Place the stuffed sweet potatoes back on the baking sheet.
- Sprinkle chopped pecans over the top of the stuffed sweet potatoes.
- Return to the oven and bake for another 10-15 minutes.
- Remove from oven and let cool slightly before serving.
