  • 1 cup (240 ml) fresh cranberries (100 grams)
  • 1/4 cup (60 ml) maple syrup (60 milliliters)
  • 1 tablespoon (15 ml) apple cider vinegar (15 milliliters)
  • 2 large onions, thinly sliced
  • 2 tablespoons (30 ml) vegetable oil (30 milliliters)
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon (15 ml) spicy brown mustard (15 grams)
  • 1 tablespoon (15 ml) margarine (14 grams)

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add sliced onions to the skillet and cook, stirring occasionally.
  3. Cook onions for 20-25 minutes until caramelized and golden brown.
  4. Season onions with a pinch of salt and set aside.
  5. In a small saucepan, combine cranberries, honey, and balsamic vinegar.
  6. Cook cranberry mixture over medium heat, stirring occasionally.
  7. Simmer for 10-15 minutes until cranberries burst and sauce thickens.
  8. Season cranberry sauce with salt and pepper to taste, then set aside.
  9. Divide ground venison into 4 equal portions and shape into balls.
  10. Heat remaining olive oil in a skillet over medium-high heat.
  11. Place venison balls in the skillet and press down to flatten.
  12. Season patties with salt and pepper, then cook for 3-4 minutes per side.
  13. Place Brie slices on top of each patty during the last minute of cooking.
  14. Cover skillet with a lid to melt Brie cheese, then remove patties.
  15. Toast brioche buns in the same skillet until lightly browned.
  16. Spread Dijon mustard on the bottom halves of the toasted buns.
  17. Place a venison patty on each bun, Brie side up.
  18. Top each patty with caramelized onions.
  19. Spoon cranberry sauce over the onions.
  20. Place the top half of the bun on each burger.
  21. Serve immediately and enjoy.
