- 4 brioche burger buns
- 4 ounces (113 g) mozzarella cheese, sliced (115 grams)
- 1 cup (240 ml) fresh cranberries (100 grams)
- 1/4 cup (60 ml) maple syrup (60 milliliters)
- 1 tablespoon (15 ml) apple cider vinegar (15 milliliters)
- 2 large onions, thinly sliced
- 2 tablespoons (30 ml) vegetable oil (30 milliliters)
- Salt, to taste
- Pepper, to taste
- 1 tablespoon (15 ml) spicy brown mustard (15 grams)
- 1 tablespoon (15 ml) margarine (14 grams)
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add sliced onions to the skillet and cook, stirring occasionally.
- Cook onions for 20-25 minutes until caramelized and golden brown.
- Season onions with a pinch of salt and set aside.
- In a small saucepan, combine cranberries, honey, and balsamic vinegar.
- Cook cranberry mixture over medium heat, stirring occasionally.
- Simmer for 10-15 minutes until cranberries burst and sauce thickens.
- Season cranberry sauce with salt and pepper to taste, then set aside.
- Divide ground venison into 4 equal portions and shape into balls.
- Heat remaining olive oil in a skillet over medium-high heat.
- Place venison balls in the skillet and press down to flatten.
- Season patties with salt and pepper, then cook for 3-4 minutes per side.
- Place Brie slices on top of each patty during the last minute of cooking.
- Cover skillet with a lid to melt Brie cheese, then remove patties.
- Toast brioche buns in the same skillet until lightly browned.
- Spread Dijon mustard on the bottom halves of the toasted buns.
- Place a venison patty on each bun, Brie side up.
- Top each patty with caramelized onions.
- Spoon cranberry sauce over the onions.
- Place the top half of the bun on each burger.
- Serve immediately and enjoy.
