  • 2 avocados
  • Juice from one large lime (about 2 tablespoon (30 ml) s)
  • 1/2 cup (120 ml) plain yogurt
  • 1/4 teaspoon (1 ml) salt
  • 1 lb (454 g) sirloin beef, trimmed and cut into strips
  • 8 cloves garlic, chopped
  • 1 cup (240 ml) grape tomatoes, sliced
  • 1/2 cup (120 ml) fresh cilantro, chopped

Instructions

  1. Prepare the fettuccine following the directions on its packaging. Once done, drain and set it aside.
  2. As the pasta cooks, place a large nonstick pan over medium heat and add the sirloin strips. Cook for 2 to 3 minutes, then incorporate the chopped garlic and continue cooking for an additional 5 minutes until the beef is fully done and the garlic turns golden. Use a slotted spoon to take them out of the pan.
  3. In a blender or food processor, blend the avocados, plain yogurt, lime juice, and salt until you achieve a silky consistency. Taste and tweak the seasoning if required.
