Ingredients

  • – 3 cloves garlic, minced
  • – 1 teaspoon (5 ml) chili powder
  • – 1 (14 ounce (397 g)) can crushed tomatoes
  • – 1/3 cup (80 ml) beef broth
  • – 1/4 cup (60 ml) coconut cream
  • – Salt & pepper to taste

Instructions

  1. Bring a pot of water to a boil and cook the pasta shells until they are just firm to the bite, following the package instructions.
  2. As the pasta cooks, heat olive oil in a frying pan, and cook the chopped onion over medium heat for about 5 minutes, allowing it to brown slightly.
  3. Introduce the ground beef to the skillet, cooking until it is no longer pink, and break it apart with a spoon as it cooks for about 5 minutes. Remove most of the fat if there’s too much.
  4. Mix in the minced garlic and chili powder, then pour in the crushed tomatoes and beef broth. Stir well, and lower the heat to let the mixture simmer gently for 4-5 minutes, allowing the sauce to thicken slightly but not dry out.
  5. Incorporate the coconut cream and adjust the seasoning with salt and pepper to your taste. Let the cream heat through before combining with the drained pasta shells. Serve right away.
