Ingredients
- – 8 ounces (227 g) medium uncooked shells
- – 1 tablespoon (15 ml) olive oil
- – 1/2 medium onion, chopped
- – 1 pound (454 g) lean ground beef
- – 3 cloves garlic, minced
- – 1 teaspoon (5 ml) chili powder
- – 1 (14 ounce (397 g)) can crushed tomatoes
- – 1/3 cup (80 ml) beef broth
- – 1/4 cup (60 ml) coconut cream
- – Salt & pepper to taste
Instructions
- Bring a pot of water to a boil and cook the pasta shells until they are just firm to the bite, following the package instructions.
- As the pasta cooks, heat olive oil in a frying pan, and cook the chopped onion over medium heat for about 5 minutes, allowing it to brown slightly.
- Introduce the ground beef to the skillet, cooking until it is no longer pink, and break it apart with a spoon as it cooks for about 5 minutes. Remove most of the fat if there’s too much.
- Mix in the minced garlic and chili powder, then pour in the crushed tomatoes and beef broth. Stir well, and lower the heat to let the mixture simmer gently for 4-5 minutes, allowing the sauce to thicken slightly but not dry out.
- Incorporate the coconut cream and adjust the seasoning with salt and pepper to your taste. Let the cream heat through before combining with the drained pasta shells. Serve right away.
