- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup fresh spinach
- 1 cup cherry tomatoes, halved
- ½ cup basil pesto
- ½ cup heavy cream
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- In a large pot, cook orzo pasta according to package instructions until al dente. Drain and set aside.
- In the same pot, add chicken broth and bring to a simmer. Stir in the cooked chicken, spinach, cherry tomatoes, and basil pesto.
- Once the spinach has wilted, lower the heat and add heavy cream. Stir to combine and heat through.
- Add the cooked orzo to the mixture and stir until well combined. Season with salt and pepper.
- Serve warm, garnished with Parmesan cheese.
Notes
You can add a splash of lemon juice for brightness and experiment with fresh herbs for added flavors. Store leftovers in an airtight container for up to three days.
