Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup fresh spinach
  • 1 cup cherry tomatoes, halved
  • ½ cup basil pesto
  • ½ cup heavy cream
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. In a large pot, cook orzo pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, add chicken broth and bring to a simmer. Stir in the cooked chicken, spinach, cherry tomatoes, and basil pesto.
  3. Once the spinach has wilted, lower the heat and add heavy cream. Stir to combine and heat through.
  4. Add the cooked orzo to the mixture and stir until well combined. Season with salt and pepper.
  5. Serve warm, garnished with Parmesan cheese.

Notes
