A warm and comforting creamy soup made in the crockpot with chicken, wild rice, and fresh vegetables.


Ingredients

  • 1 ½ lb boneless, skinless chicken breasts
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 810 cups low sodium chicken broth
  • 1 cup uncooked wild rice, rinsed
  • 4 garlic cloves, minced
  • 1 bay leaf
  • 1 Tbsp Italian seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ¼ cup flour (gluten free option available)
  • ½ cup half and half
  • ½ cup whole milk
  • ½ tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Begin by dicing the onion, chopping the carrots, celery, and mincing the garlic.
  2. Lay the chicken breasts at the bottom of the slow cooker.
  3. Sprinkle garlic, Italian seasoning, thyme, parsley, sea salt, and cracked pepper over the chicken.
  4. Layer the diced onion, chopped carrots, and celery on top of the chicken.
  5. Pour in 8 cups of chicken broth, then add the uncooked, rinsed wild rice and the bay leaf.
  6. Cover the slow cooker and cook on low for 6-8 hours, until the rice is tender and cooked.
  7. Once cooked and the chicken reaches an internal temperature of 165°F, remove the chicken breasts, shred them, and return the shredded chicken to the soup.
  8. In a separate bowl, whisk together the flour, half and half, and whole milk until the flour dissolves completely.
  9. Gradually pour this mixture into the soup while stirring to combine.
  10. Adjust consistency by adding more broth if the soup seems too thick.
  11. Serve hot, garnished with fresh parsley, alongside your favorite crusty bread.

Notes

For extra nutrition, consider adding spinach or kale towards the end of cooking. An immersion blender can create a creamier texture without losing chunkiness.
