A comforting one-pan meal featuring juicy chicken, aromatic herbs, and fluffy basmati rice, perfect for weeknight dinners or special occasions.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless (skinless chicken breasts or thighs)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 small onion (finely diced)
  • 1 cup heavy cream (or half & half for a lighter option)
  • ½ cup chicken broth
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • ½ cup Parmesan cheese (grated)
  • 1 cup basmati rice (rinsed)
  • 2 cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat olive oil in a large pan over medium heat. Season chicken with garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper. Sear for 6-7 minutes on each side until golden brown and cooked through.
  2. Remove chicken and let it rest. In the same pan, add butter, then sauté minced garlic and diced onion for 2-3 minutes until fragrant.
  3. Add rinsed basmati rice to the pan, stir to coat the grains. Pour in chicken broth, salt, and black pepper. Bring to a boil, reduce heat and cover. Let rice simmer for 15-20 minutes until tender.
  4. In the same pan after removing rice, add heavy cream and chicken broth. Stir in thyme, rosemary, oregano, and Parmesan cheese. Simmer for a few minutes until thickened.
  5. Return chicken to the pan, spoon sauce over it, and allow to simmer together for about 5 minutes.
  6. Serve creamy herb chicken over basmati rice, garnished with fresh parsley and lemon zest.

Notes

For best results, use a meat thermometer to ensure chicken reaches an internal temperature of 165°F. Adjust sauce consistency with chicken broth if needed.
