- 4 boneless, skinless chicken breasts
- 8 oz fresh mushrooms, sliced
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet.
- Sear the chicken for about 6-7 minutes on each side, until golden brown and cooked through. Once done, remove the chicken and set aside.
- Add the sliced mushrooms to the same skillet and cook until they soften, approximately 4-5 minutes.
- Stir in the minced garlic and Italian seasoning, cooking for an additional minute until fragrant.
- Add the fresh spinach, allowing it to wilt, which only takes a minute or two.
- Stir in the heavy cream and bring the mixture to a gentle simmer. Incorporate the grated Parmesan cheese, stirring until melted and smooth.
- Place the chicken breasts back in the skillet, spooning the creamy sauce over them.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, allowing the flavors to meld and the dish to bubble.
Notes
For added flavor, consider a pinch of nutmeg or a splash of lemon juice in the cream sauce. Store leftovers in an airtight container in the refrigerator for 3-4 days.
