  • 1 small rotisserie chicken (pulled)
  • ½ cup chunky salsa
  • ⅓ cup sour cream
  • 1 tbsp taco seasoning
  • 1 (15 oz) can of black beans (rinsed and drained)
  • 1 (15 oz) can of corn (drained)
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Cook the rice according to the package instructions, melting butter in a saucepan with water. Allow it to simmer for about 15 minutes until the rice is fluffy.
  2. Stir in ½ cup of chunky salsa, ⅓ cup of sour cream, and 1 tablespoon of taco seasoning to make it creamy and flavorful.
  3. Preheat your oven to 350°F and grease a 9×13 baking dish.
  4. Pull the rotisserie chicken apart into bite-sized pieces and prepare the rinsed black beans and drained corn.
  5. Spread the creamy Mexican rice mixture evenly in the baking dish, layer on the black beans and corn, followed by the shredded chicken and finally the Mexican cheese blend.
  6. Bake uncovered for 15-20 minutes, or until the cheese turns golden brown and bubbly.
