- 2 (6.4 oz) boxes of Mexican-style rice (requires butter and water)
- 1 small rotisserie chicken (pulled)
- ½ cup chunky salsa
- ⅓ cup sour cream
- 1 tbsp taco seasoning
- 1 (15 oz) can of black beans (rinsed and drained)
- 1 (15 oz) can of corn (drained)
- 2 cups shredded Mexican cheese blend
Instructions
- Cook the rice according to the package instructions, melting butter in a saucepan with water. Allow it to simmer for about 15 minutes until the rice is fluffy.
- Stir in ½ cup of chunky salsa, ⅓ cup of sour cream, and 1 tablespoon of taco seasoning to make it creamy and flavorful.
- Preheat your oven to 350°F and grease a 9×13 baking dish.
- Pull the rotisserie chicken apart into bite-sized pieces and prepare the rinsed black beans and drained corn.
- Spread the creamy Mexican rice mixture evenly in the baking dish, layer on the black beans and corn, followed by the shredded chicken and finally the Mexican cheese blend.
- Bake uncovered for 15-20 minutes, or until the cheese turns golden brown and bubbly.
