Description
A heartwarming soup that combines lean ground beef, creamy Velveeta cheese, and earthy potatoes, perfect for family dinners.
Ingredients
Scale
- 1½ pounds lean ground beef
- 6 cups peeled and diced Russet potatoes
- 8 ounces Velveeta cheese, cubed
- 1 medium white onion, peeled and diced
- 1 large garlic clove, minced
- 2 cups frozen vegetable mix
- 6 cups chicken broth
- 1½ cups milk
- 2 tablespoons cornstarch
- 3 teaspoons dried basil
- 2 teaspoons dried parsley flakes
Instructions
- In a large skillet, cook the ground beef and onions over medium heat until the meat is browned and the onions are soft. Drain any excess grease.
- Add the minced garlic to the skillet, cooking until fragrant — about 30 seconds to a minute.
- Transfer the cooked beef, onions, and garlic into your slow cooker or large pot.
- Toss in the diced potatoes, chicken broth, frozen vegetables, dried basil, and parsley flakes. Stir to combine.
- Allow the soup to cook until the potatoes become tender, which typically takes 6-8 hours on low in the slow cooker or 3-4 hours on high; alternatively, let it simmer on your stove.
- In a small bowl, mix the cornstarch into the milk. Stir this mixture into the soup to help thicken it slightly.
- Add the cubed Velveeta cheese and stir often until the cheese melts completely into the soup.
Notes
For thicker soup, add more cornstarch mixed with milk. Experiment with adding different vegetables or herbs for variations.
