- 12 ounces fettuccine or penne pasta
- 1 pound sirloin or ribeye steak, thinly sliced
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup beef broth
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- Fresh parsley, chopped
- Additional grated parmesan cheese, optional
Instructions
- Boil the pasta in a large pot of salted water according to the package instructions.
- Drain the pasta and reserve about 1/2 cup of the cooking water.
- Season the steak slices with salt and black pepper.
- In a large skillet, heat olive oil over medium-high heat and sear the steak pieces until browned, about 2–3 minutes per side. Remove and set aside.
- Lower the heat to medium, add butter to the skillet, and once melted, sauté the minced garlic for 1–2 minutes.
- Deglaze the skillet with beef broth and simmer for 2 minutes.
- Add heavy cream and grated parmesan cheese, stirring to thicken the sauce, about 3–4 minutes.
- If using, stir in crushed red pepper flakes.
- Combine the cooked pasta with the sauce, using reserved pasta water if necessary to adjust consistency.
- Return the steak to the skillet and mix gently with the pasta and sauce.
- Serve garnished with fresh parsley and extra parmesan cheese if desired.
Notes
Slice the steak thinly against the grain for tenderness. Fresh herbs like basil or thyme can enhance flavor.
