  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese (grated)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat a splash of oil over medium heat. Sauté the chopped onion until translucent.
  3. Add the minced garlic and sliced mushrooms to the skillet. Stir until mushrooms become tender.
  4. Incorporate the sun-dried tomatoes into the skillet, mixing thoroughly.
  5. Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer.
  6. Stir in the heavy cream, allowing the sauce to thicken slightly.
  7. Add the drained pasta to the skillet, tossing to coat it in the creamy sauce.
  8. Fold in the fresh spinach and let it wilt in the heat of the pasta.
  9. Sprinkle the grated Parmesan cheese over the dish, mixing until creamy and melty.
  10. If desired, add red pepper flakes for a touch of spice.
