Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat a splash of oil over medium heat. Sauté the chopped onion until translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Stir until mushrooms become tender.
- Incorporate the sun-dried tomatoes into the skillet, mixing thoroughly.
- Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer.
- Stir in the heavy cream, allowing the sauce to thicken slightly.
- Add the drained pasta to the skillet, tossing to coat it in the creamy sauce.
- Fold in the fresh spinach and let it wilt in the heat of the pasta.
- Sprinkle the grated Parmesan cheese over the dish, mixing until creamy and melty.
- If desired, add red pepper flakes for a touch of spice.
