Ingredients

  • 2 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk (or other plant-based milk)
  • Salt and pepper to taste
  • Olive oil (for sautéing)
  • Fresh herbs for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic; sauté until translucent.
  2. Add chopped carrots and diced potatoes, cooking for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer until the vegetables are tender, about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
