- 2 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk (or other plant-based milk)
- Salt and pepper to taste
- Olive oil (for sautéing)
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic; sauté until translucent.
- Add chopped carrots and diced potatoes, cooking for another 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer until the vegetables are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
- Stir in the coconut milk, season with salt and pepper to taste, and heat through.
- Serve hot, garnished with fresh herbs if desired.
Notes
For a chunkier texture, reserve some vegetables before blending and add them back in after pureeing. Experiment with spices like cumin or smoked paprika for added layers of flavor.
