- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, chopped
- 2 cups spinach
- 3 cups vegetable broth
- 1 cup cream
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the bell pepper and spinach, cooking until the spinach wilts.
- Pour in the vegetable broth and bring to a simmer.
- Blend the soup until creamy using an immersion blender or in batches with a regular blender.
- Stir in the cream, and season with salt and pepper.
- Serve hot.
