  • 2 large eggs
  • 1 cup (240 ml) breadcrumbs (100 grams)
  • 1/4 cup (60 ml) crumbled feta cheese (40 grams)
  • 3 tablespoons honey (45 ml)
  • 1 teaspoon (5 ml) crushed red pepper flakes (2 grams)
  • 2 tablespoons (30 ml) chopped fresh parsley (8 grams)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss butternut squash cubes with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread the seasoned squash on a baking sheet in a single layer.
  4. Roast squash in the oven for 25-30 minutes until tender and slightly crispy.
  5. Meanwhile, set up a breading station with three shallow bowls.
  6. Place flour in the first bowl.
  7. Beat eggs in the second bowl.
  8. Put breadcrumbs in the third bowl.
  9. Once roasted, let the squash cool for a few minutes.
  10. Dredge each squash cube in flour, shaking off excess.
  11. Dip each floured cube into the beaten eggs.
