- 1 pound Cod fillets, cut into strips
- 8 small Corn tortillas, warmed
- ½ cup All-purpose flour
- ½ cup Cornmeal
- 1 Egg, beaten
- ½ cup Buttermilk
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 cup Cabbage, shredded
- 1 Lime, juiced
- ½ cup Fresh cilantro, chopped
- 1 Avocado, sliced
- Sour cream or yogurt, for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the cod by cutting it into strips.
- In one bowl, combine flour, cornmeal, paprika, salt, and pepper. In another bowl, beat the egg and mix it with buttermilk.
- Dip each cod strip first into the buttermilk mixture and then into the flour mixture, ensuring it is well coated.
- Place the coated cod on a baking sheet and bake for 15-20 minutes or until golden brown and crispy.
- Meanwhile, prepare the toppings by shredding cabbage, slicing avocado, and chopping fresh cilantro.
- Warm the corn tortillas in a pan or microwave.
- Assemble the tacos by placing crispy cod in a tortilla, topping with cabbage, avocado, lime juice, cilantro, and sour cream or yogurt.
- Serve immediately and enjoy!
