Delightful crispy egg rolls filled with a luxurious blend of lobster, shrimp, and crab, accompanied by a flavorful remoulade sauce.

- 9–10 egg roll wrappers
- 1–2 lobster tails, deveined and shelled
- 1/2 lb shrimp, deveined and shelled
- 8 oz jumbo lump crab
- 4 oz crab meat
- 1/4 cup red onion, diced
- 1/4 cup bell peppers, diced
- 1/4 cup green onion, diced
- 2 tbsp parsley, chopped
- 1 tsp Old Bay seasoning
- 1/2 tsp salt
- 1 tsp pepper
- 1 cup mayonnaise (for remoulade sauce)
- 1/2 cup mayonnaise
- 1 tsp parsley, freshly chopped
- 1 tsp chives, freshly chopped
- 1 tsp Dijon mustard
- 1 tsp black pepper
- 1 tsp Worcestershire sauce
- 1 tsp onion powder
- 1 tsp lemon juice
- 1/2 tsp Old Bay seasoning
- 1/4 tsp paprika
- 1 egg (for egg wash)
- 1 tbsp water or milk
- Canola oil (for frying)
- 1 cup unsalted butter, melted
Instructions
- Prepare the seafood filling by combining the lobster tails, shrimp, jumbo lump crab, and crab meat in a large mixing bowl. Fold in the diced red onion, bell peppers, green onion, and parsley. Season with Old Bay, salt, and pepper.
- Make the remoulade sauce by whisking together mayonnaise, additional mayo, parsley, chives, Dijon mustard, black pepper, Worcestershire sauce, onion powder, lemon juice, Old Bay, and paprika in a separate bowl. Set aside.
- Whisk together the egg and water (or milk) in a small bowl for the egg wash.
- Assemble the egg rolls by placing a wrapper on a clean surface, spooning a generous amount of the seafood filling onto it, and sealing with the egg wash.
- Fry the rolls in heated canola oil for about 3-4 minutes on each side, until golden brown.
- Drain the fried rolls on paper towels and serve them with the remoulade sauce.
Notes
Keep egg roll wrappers covered with a damp cloth to prevent drying out. You can freeze leftover egg rolls for later use.
