  • 1 (397g) package extra firm tofu
  • 1 tablespoon (15 ml) cornstarch
  • 1/2 teaspoon (3 ml) salt
  • 3 tablespoons (45 ml) high heat oil (such as avocado)
  • 2 ½ cups (600g) green beans, cut into 1-inch pieces
  • 1 cup (240 ml) baby carrots, cut lengthwise
  • 1 tablespoon (15 ml) sesame oil
  • 1 1/2 tablespoons (23 ml) grated ginger
  • 1 1/2 tablespoons (23 ml) minced garlic
  • 1 tablespoon (15 ml) rice vinegar
  • 3 tablespoons (45 ml) soy sauce (or GF tamari)
  • 1/4 teaspoon (1 ml) red pepper flakes
  • 3 tablespoons (45 ml) brown sugar
  • 1 tablespoon (15 ml) cornstarch
  • 2 tablespoons (30 ml) water

Instructions

  1. TOFU: Remove the tofu from its packaging. Place it on a dish with a folded tea towel underneath. Lay another tea towel over the top, shaped like the tofu, followed by another dish, and weigh it down with a heavy cast iron pan or some metal cans. Alternatively, use a tofu press. Allow it to dry for 15-20 minutes, or up to an hour. Afterwards, cut the tofu into ¾-1 inch cubes and shake them in a zip-top bag with 1 tablespoon of cornstarch and ½ teaspoon of salt until they are evenly coated.
  2. BLEND: While the tofu is drying, make the sauce by blending the sauce ingredients until smooth (refer to notes). Put this mixture aside.
  3. CRISPY TOFU: Heat 2 tablespoons of oil in a wok or large nonstick pan over medium-high heat. Add the tofu and let it cook for 3-7 minutes, turning as necessary to brown all sides. Pour in 2 tablespoons of the sauce and continue cooking until the tofu is coated in the sauce; this should take about 2-3 minutes. Once the tofu is caramelized, transfer it to a plate.
  4. STIR FRY: If needed, add the remaining tablespoon of oil to the pan. Add the vegetables and sauté for 3-4 minutes, stirring occasionally until they are cooked to your liking. Return the tofu to the pan. Stir the sauce to mix well and pour it into the pan. Stir everything to ensure it is well-coated. Continue to cook for another 1-2 minutes, or until the tofu absorbs the sauce.
  5. SERVE: Dish up while warm, pairing with rice, quinoa, noodles, cauliflower rice, or enjoy on its own. The tofu will become less crispy as it sits, so it’s best consumed immediately.
