Description

Delightful Crumbl Pecan Pie Cookies blend flavors of classic pecan pie and cookie, bringing warmth and nostalgia to every bite.

Ingredients

Scale
  • ½ cup butter (softened)
  • ⅓ cup vegetable or canola oil
  • ½ cup granulated sugar
  • ¼ cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & ⅓ cup flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • 5 tbsp additional butter
  • ⅔ cup brown sugar
  • 1 & ¼ cup chopped pecans
  • 1 tsp vanilla extract
  • ⅓ cup heavy cream
  • ¼ tsp cinnamon
  • A pinch of nutmeg
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together the softened butter, oil, granulated sugar, and powdered sugar until fluffy and smooth.
  3. Incorporate the egg and vanilla extract into the butter mixture.
  4. Sift in the flour, salt, and baking powder, mixing until just combined to form a dough.
  5. Using a large cookie scoop, portion out nine equal dough balls onto the prepared baking sheet.
  6. Gently flatten each ball to about one inch thick.
  7. Press down the center of each dough ball to create a space for the pecan pie filling.
  8. Bake for about 8-9 minutes, then cool on the baking sheet briefly before transferring to a wire rack.

Notes

Chilling the dough for 30 minutes before baking can enhance the flavor and texture, resulting in chewier cookies.
