- ¼ tsp cinnamon
- A pinch of nutmeg
- A pinch of salt
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Cream together the softened butter, oil, granulated sugar, and powdered sugar until fluffy and smooth.
- Incorporate the egg and vanilla extract into the butter mixture.
- Sift in the flour, salt, and baking powder, mixing until just combined to form a dough.
- Using a large cookie scoop, portion out nine equal dough balls onto the prepared baking sheet.
- Gently flatten each ball to about one inch thick.
- Press down the center of each dough ball to create a space for the pecan pie filling.
- Bake for about 8-9 minutes, then cool on the baking sheet briefly before transferring to a wire rack.

Chilling the dough for 30 minutes before baking can enhance the flavor and texture, resulting in chewier cookies.
