Description
A comforting and flavorful breakfast dish with scrambled eggs, crumbled sausage, cheese, and a savory sausage gravy, all wrapped in soft tortillas.
Ingredients
Scale
- 6 pieces scrambled eggs
- 1 pound crumbled sausage (plant-based for a meatless option)
- 2 cups cheese (dairy alternatives are fine)
- 1 cup hash browns (substituted with roasted potatoes, as desired)
- 4 pieces tortillas (gluten-free as a choice)
- 1/2 pound sausage (for gravy)
- 2 tablespoons flour (for thickening)
- 2 cups milk (plant-based alternatives work here)
- Seasonings (to taste)
Instructions
- Cook the crumbled sausage in a large skillet over medium heat until browned and fully cooked.
- Scramble the eggs in a bowl, season with salt and pepper, then cook in the same skillet after removing the sausage.
- Prepare the hash browns in the same skillet or roast in the oven to desired crispiness.
- Assemble each tortilla with a mixture of scrambled eggs, crumbled sausage, hash browns, and a sprinkle of cheese, then roll tightly.
- Make the gravy by cooking the remaining sausage, adding flour, and gradually whisking in milk until thickened.
- Bake the assembled enchiladas topped with gravy and cheese in a preheated oven for about 20 minutes until bubbly and golden.
- Serve warm, garnished with fresh herbs or sliced avocado if desired.
Notes
For a spicier version, add jalapeños or hot sauce to the eggs. Store leftovers in an airtight container for up to 3-4 days.
