  • Author: emily
  • Total Time: 45 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian (can be made plant-based)

Description

A comforting and flavorful breakfast dish with scrambled eggs, crumbled sausage, cheese, and a savory sausage gravy, all wrapped in soft tortillas.

Ingredients

Scale
  • 6 pieces scrambled eggs
  • 1 pound crumbled sausage (plant-based for a meatless option)
  • 2 cups cheese (dairy alternatives are fine)
  • 1 cup hash browns (substituted with roasted potatoes, as desired)
  • 4 pieces tortillas (gluten-free as a choice)
  • 1/2 pound sausage (for gravy)
  • 2 tablespoons flour (for thickening)
  • 2 cups milk (plant-based alternatives work here)
  • Seasonings (to taste)

Instructions

  1. Cook the crumbled sausage in a large skillet over medium heat until browned and fully cooked.
  2. Scramble the eggs in a bowl, season with salt and pepper, then cook in the same skillet after removing the sausage.
  3. Prepare the hash browns in the same skillet or roast in the oven to desired crispiness.
  4. Assemble each tortilla with a mixture of scrambled eggs, crumbled sausage, hash browns, and a sprinkle of cheese, then roll tightly.
  5. Make the gravy by cooking the remaining sausage, adding flour, and gradually whisking in milk until thickened.
  6. Bake the assembled enchiladas topped with gravy and cheese in a preheated oven for about 20 minutes until bubbly and golden.
  7. Serve warm, garnished with fresh herbs or sliced avocado if desired.

Notes

For a spicier version, add jalapeños or hot sauce to the eggs. Store leftovers in an airtight container for up to 3-4 days.
