- 2 1/2 cups shredded chicken
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chipotle chili powder (optional)
- 1/2 cup salsa
- 1 tablespoon olive oil
- 10 corn tortillas
- 2.5 cups shredded Monterey Jack or Mexican cheese
Instructions
- Preheat the oven to 450°F (230°C).
- Mix together the shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder (if using), and salsa in a large bowl until well combined.
- Wrap the corn tortillas in a damp paper towel and microwave them for 30-60 seconds or until pliable.
- Brush one side of each tortilla with olive oil.
- Place 2 tablespoons of shredded cheese on one half of the tortilla.
- Top the cheese with 1/4 cup of the chicken mixture.
- Add 2 more tablespoons of shredded cheese on top of the chicken.
- Fold the tortilla over the filling and press down gently to seal.
- Repeat this process with the remaining tortillas, arranging each taco in a single layer on a baking sheet.
- Bake the tacos for 16 minutes, flipping them halfway through.
- Remove the tacos from the oven once they are golden brown and crispy, letting them rest for 3 minutes before serving.
Notes
For added flavor, serve these tacos with toppings like guacamole, diced tomatoes, or shredded lettuce. These tacos store well in the fridge and reheat beautifully.
