Description

Delicious easy baked crispy chicken tacos with smoky spices, perfect for family gatherings or a simple weeknight meal.


Ingredients

  • 2 1/2 cups shredded chicken
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chipotle chili powder (optional)
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 10 corn tortillas
  • 2.5 cups shredded Monterey Jack or Mexican cheese

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Mix together the shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder (if using), and salsa in a large bowl until well combined.
  3. Wrap the corn tortillas in a damp paper towel and microwave them for 30-60 seconds or until pliable.
  4. Brush one side of each tortilla with olive oil.
  5. Place 2 tablespoons of shredded cheese on one half of the tortilla.
  6. Top the cheese with 1/4 cup of the chicken mixture.
  7. Add 2 more tablespoons of shredded cheese on top of the chicken.
  8. Fold the tortilla over the filling and press down gently to seal.
  9. Repeat this process with the remaining tortillas, arranging each taco in a single layer on a baking sheet.
  10. Bake the tacos for 16 minutes, flipping them halfway through.
  11. Remove the tacos from the oven once they are golden brown and crispy, letting them rest for 3 minutes before serving.

Notes

For added flavor, serve these tacos with toppings like guacamole, diced tomatoes, or shredded lettuce. These tacos store well in the fridge and reheat beautifully.
