- 2 pounds (900 g) beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 dried guajillo chiles
- 3 dried ancho chiles
- 4 cups (960 ml) beef broth
- 1 tablespoon (15 ml) apple cider vinegar
- 2 teaspoons (10 g) ground cumin
- 1 teaspoon (5 g) dried oregano
- 1 teaspoon (5 g) smoked paprika
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon (15 ml) vegetable oil
- 12 corn tortillas
- 1 cup (100 g) shredded cheddar cheese
- 1/2 cup (120 ml) chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Preheat oven to 325°F (160°C).
- Cut beef chuck roast into large chunks and season with salt and black pepper.
- Heat vegetable oil in a large oven-safe pot over medium-high heat.
- Sear beef chunks until browned on all sides, then remove from pot and set aside.
- In the same pot, add chopped onion and minced garlic; sauté until onion is translucent.
- Remove stems and seeds from guajillo and ancho chiles.
- Add chiles to the pot and stir briefly until fragrant.
- Pour in beef broth and apple cider vinegar.
- Add ground cumin, dried oregano, and smoked paprika to the pot.
- Return beef chunks to the pot and bring mixture to a simmer.
- Cover pot with lid and transfer to the preheated oven.
- Cook for 3 hours, or until beef is tender and easy to shred.
- Remove pot from oven and let it cool slightly.
- Remove beef from pot and shred using two forks.
- Return shredded beef to the pot and stir to combine with sauce.
- Heat a non-stick skillet over medium heat.
- Place a corn tortilla in the skillet and sprinkle with Monterey Jack cheese.
- Spoon a portion of the beef mixture onto one half of the tortilla.
- Fold tortilla in half and cook until cheese is melted and tortilla is crisp.
- Repeat with remaining tortillas, cheese, and beef mixture.
- Garnish tacos with chopped cilantro.
- Serve tacos with lime wedges on the side.
