- 4 cups butternut squash, peeled and cubed
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (like cheddar or mozzarella)
- 1 cup breadcrumbs
- 1 tablespoon olive oil

- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon paprika
Instructions
- Peel and cube the butternut squash, ensuring even pieces for uniform cooking.
- Cook the squash by either boiling until tender or roasting it in the oven for about 25 minutes at 400°F.
- Blend the cooked squash with the vegetable broth, heavy cream, salt, pepper, garlic powder, onion powder, and paprika until smooth.
- Preheat the oven to 350°F. Grease a casserole dish with a bit of olive oil.
- Pour the blended mixture into the prepared dish and spread it out evenly.
- Top with shredded cheese and breadcrumbs. Drizzle with olive oil.
- Bake for 30-35 minutes, until the top is golden and the casserole is heated through.
Notes
For a crispier topping, broil for a couple of minutes after baking. Garnish with fresh herbs before serving.
