- 4 large flour tortillas
- 2 cups cooked chicken, shredded
- 8 slices bacon, cooked and crumbled
- 2 cups Mexican cheese blend, shredded
- 1/2 cup ranch dressing
- 1 cup tomatoes, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons butter (for cooking)
Instructions
- Mix shredded chicken and ranch dressing in a bowl until well combined.
- Fold in crumbled bacon, diced tomatoes, finely chopped red onion, and fresh cilantro.
- Spread a layer of Mexican cheese on one half of a tortilla.
- Add a generous amount of the chicken mixture on top of the cheese, followed by another sprinkle of cheese.
- Fold the tortilla in half, enclosing the filling securely.
- Heat a skillet over medium heat and melt butter.
- Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown and the cheese melts.
- Repeat with remaining tortillas and fillings.
- Serve warm, sliced into wedges.
Notes
For added flavor, consider using a mix of cheeses and adding jalapeños for heat. You can also pre-cook the ingredients to reduce cooking time.
